Afternoon!! Well…I took a break mid-day to make lunch. I didn’t have enough veggies to make a salad, but I did find the leeks that had been in the fridge for nearly a week. I had been planning to make potato leek soup so I decided to just go ahead and do it.
The recipe came from Gina’s WW Recipes. Her site says it’s 2.75 pts. (156 cal.), but it came out to 2 when I put it in the recipe builder.

The only snag I hit was that I didn’t notice the recipe called for it to be blended with an immersible blender. I don’t have one so I just scooped it into the regular blender in two batches. Came out great!!

I had a bowl with a corn muffin and a glass of water. The soup was fantastic!!! I had to go back for another bowl.

I HIGHLY recommend you try this soup!!
Hopefully when the husband gets up it will help him feel better.
